- 3 tbsp olive oil
- 1 large onion, chopped

- 1 tsp ground turmeric
- 1 tsp ground ginger
- 1/2 tsp black pepper
- 1/4 tsp saffron threads
- 1 tsp salt, plus more to taste
- 3 carrots, peeled and halved
- 2 turnips, peeled and quartered
- 1/4 small green cabbage, cut into wedges
- 2 zucchini, halved
- 1 cup (250 g) butternut or pumpkin, cut into chunks
- 1 1/2 cups cooked chickpeas (or 1 can, drained)
- 1 small bunch cilantro and parsley, tied
- 6 cups (1.4 L) water
For the couscous
- 3 cups (500 g) medium couscous
- 3 tbsp olive oil
- 1 tsp salt
- Warm water, as needed

Instructions
- Heat the olive oil in the bottom of a couscoussier or a large pot over medium heat. Soften the onion for 5 minutes, then stir in the grated tomato, turmeric, ginger, pepper, saffron and salt. Cook for 2 minutes until fragrant.
- Add the carrots and turnips, pour in the water, add the herb bundle and bring to a boil. Reduce to a steady simmer and cook for 20 minutes.
- Meanwhile, prepare the couscous: place it in a wide bowl, mix with 1 tablespoon oil and the salt, then sprinkle over enough warm water to just moisten the grains. Rub between your hands to separate, and let it swell for 10 minutes.
- Steam the couscous over the simmering broth (or in a steamer basket) for 15 minutes. Tip it back into the bowl, fluff with a fork, drizzle with a little water and the remaining oil, and steam a second time for 15 minutes for light, separate grains.
- Add the cabbage, zucchini, squash and chickpeas to the broth and simmer for another 20 minutes, until all the vegetables are tender.
- Mound the couscous on a large platter, make a well in the center, and arrange the vegetables on top. Moisten generously with the saffron broth and serve the rest of the broth on the side.
