UK gas mark numbers correspond to specific oven temperatures, and the scale steps up in even intervals. Gas Mark 1 is about 140°C (275°F), and each mark adds roughly 14°C, or about 25°F. The most-used setting is Gas Mark 4, which equals around 180°C or 350°F, the classic moderate oven for cakes and biscuits. Going hotter, Gas Mark 6 is about 200°C (400°F) and Gas Mark 7 is roughly 220°C (425°F), the range for roasting and crisp pastry.
This converter translates any gas mark into both Celsius and Fahrenheit so you can use an old British recipe in a modern dial oven, or vice versa. Pick the gas mark and you'll see the equivalent temperatures at a glance. A handy tip: gas mark steps aren't perfectly even at the very top and bottom of the range, so for delicate baking trust an oven thermometer over the dial markings, since older gas ovens in particular can drift from their stated marks.
US recipes use Fahrenheit, most of the world uses Celsius, and UK gas ovens use Gas Mark. The conversions are simple: °C = (°F − 32) × 5/9 and °F = (°C × 9/5) + 32. Gas Mark is a stepped scale, so we snap to the nearest mark when you convert to it.

Fan (convection) ovens run hotter, reduce the temperature by about 20°C (25°F), or one gas mark, and check a little early.
Gas Mark 4 is about 180°C or 350°F, a moderate oven. It's the most common setting for cakes, biscuits, and general baking.
Gas Mark 6 is roughly 200°C, or about 400°F. It's a fairly hot oven used for roasting vegetables and baking many pastries.
